ABOUT THIS PINK BLENDED COCONUT LEMONADE
I have so much frozen coconut in my freezer I want to use up right now and lemonade has been a hot commodity in my household so I thought ok wait, creamy lemonades have been a thing, why not do that with the frozen coconut meat!? Spring is upon us which means it’s smoothie season. We typically make 1 smoothie a day for everyone in my household. It’s such a refreshing and yummy way to get in some healthy fruits as well as just something nice to sip on that contrasts the hot summer months. Sitting outside in the sun, working away with a smoothie in hand is the ultimate happy place for me.. Well the barn might be my ultimate happy place, then beach… Smoothie in hand outside is profanely 3rd! Haha

Frozen coconut meat
Freeze full fat coconut milk canned or barista style (1 cup & 1/3 cup worth). The extra fat ensures more meat like quality and allows for the coconut to hold more ice with its density, it also acts as more of a thick replacement for actual coconut meat since there’s essentially coconut meat in the milk part of those cans! I recommend using a reusable or compostable ziplock so you’re able to freeze it thin and flat in the bag, makes it easier to break off. You can of course use an ice cube mold too!
Freeze dried dragonfruit
I used freeze dried dragonfruit because that’s what I had available. You can easily use pink dragonfruit powder and frozen pink dragonfruit.

PLANET FRIENDLY POINTS
Using freeze dried fruits is a great way to preserve fruit or even veggies (honestly you can pretty much freeze dry anything now a days), but it allows you to save them for future use as opposed to tossing in the trash! I ended up using freeze dried pink dragonfruit in this recipe. Feel free to use a powder too. Most powders are actually former freeze dried fruits they grounded up into a powder!
INGREDIENTS
1 cup & 1/3 cup frozen coconut
1 cup lemonade
1/8 cup agave (2 tablespoons)
1/4 cup freeze dried dragonfruit or dragon fruit powder (frozen dragonfruit even works too!)
RECIPE STEPS EXPLAINED
1 Gather tools & ingredients
Gather your blender, measuring tools & ingredients!
2 Add
Add all ingredients to your bender
3 Blend
Blend on high for 25 give or take seconds. Blend for longer if you still see chunks! If you’re having trouble getting the blender to move around the ingredients for blending, add lemonade 1/4 at a time.

4 Optional garnish
Optional fun garnish: sprinkle a dusting of dragonfruit powder on top or sprinkle dragonfruit pieces/coconut flakes! A lemon slice would be nice too if we’re feelin fancy!

TIPS
- For a fun textural addition, try blending dates or coconut flakes into your smoothie! They don’t over power, add a bit of sweetness, and my favorite, add nice texture!
- Using frozen or fresh pink dragonfruit is of course the unprocessed version of the fruit giving a brighter fuller pink color!

EXPIRATION & STORAGE
Best eaten immediately! If you want you can freeze for later it will just need to defrost for 10minutes or so to soften up its hard frozen texture. You won’t get the same blended texture as when you first made it, but it makes for a nice frozen treat later.
