ABOUT THIS Passsionfruit Coconut Smoothie

I have so much coconut in my fridge right now and have been trying to find ways to use it! Coconut might be one of my favorite fruits. You’ll always see me with coconut milk if any milk at all when it comes down any beverage. The dates in this smoothie also add a really nice textural and sweet touch! This recipe makes 1 smoothie.

ALTERNATIVES 

Coconut milk.

You can substitute for any milk of your choice: oat, whole, skim, hemp, you name it!

Dates.

Feel free to omit the dates. They don’t need a substitute. 

Agave.

A natural cane sugar simple syrup would be a nice healthier option. A passionfruit or coconut syrup would also taste amazing in this.

Frozen Passionfruit.

If you don’t have frozen passionfruit, grab passionfruit juice at the store and freeze an ice cube trays or similar. If you don’t have any trays, you can freeze them in Frozen coconut meat.

If you don’t have access to frozen coconut meat, you can freeze full fat coconut milk with optional coconut shavings mixed in.

PLANET FRIENDLY POINTS

Coconuts are actually super eco-friendly. I know, we love to hear it! They don’t require much water or pesticides with that tough exterior. You can also use every part of the pant so there’s really no waste when it comes to coconuts. Even their shells can be used as bowls and cups!

RECIPE STEPS EXPLAINED

1 Grab all your ingredients and measuring tools

2 Add to the blender:

  • 1/2 cup frozen passionfruit
  • 2/3 cup frozen and coconut meat
  • One cup coconut milk
  • Four dates
  • 1/4 cup agave
  • 1 small dash of cardamom

I do suggest having both coconut and passionfruit frozen or you’ll have more of a liquidy juice as opposed to a frozen smoothie. If you need to freeze passionfruit juice and ice cube trays or other similar trays, you can also do this with coconut milk.

3 Blend on high till completely combined about 20-40 seconds

EXPIRATION STORAGE


I recommend eating fresh. You can make ahead and freeze or freeze left over smoothie for later. I suggest eating it within that month before the smoothie starts to loose it’s freshness and flavor. It will take on a different texture once frozen, you can let it defrost, but it will still be difficult to drink with a straw. You’ll most likely want to grab a spoon.
