These healthy blue cashew bites are a sweet snack ready to curb your cravings with agave, vanilla, cashews, coconut oil, dates, blue spirulina, and oats. Great for kiddos!

About these super fun Healthy Blue Cashew Bites

I love eating these healthy blue cashew bites anytime of day.

You might say why blue? Why is it necessary? Because these bites are so fun it adds just a hint of “oo that’s different and cool” into your day. That’s why! If you need a healthy sweet tooth craving this it is it! They’re on the sweet side, but sweetened with agave to be guilt free. 

When to eat

You can eat them for breakfast, a quick snack, they’re filling for a meal replacement if you don’t have time to prep anything and they go great with a light smoothie for a healthy lunch combo. I personally always crave something sweet in the afternoon right after lunch. I found these to be a yummy go-to instead of licorice or chocolate.

Alternatives

I use agave in this recipe for a more neutral sweetener. You’re more than welcome to use honey if you prefer or if that’s all you have.

The Blue spirulina in these healthy blue cashew bites are one of the most eco-friendly ingredients out there.

They require minimal land and fresh water to grow taking less resources to grow. They don’t need any pesticides… That’s a big one! No run off or chemicals being spread into the earth or surrounding products. It’s nutritional benefits are endless!!

More than anything, they take in large amounts of carbon dioxide and in return omit oxygen bringing the earth and us the O2 we need for survival. When you buy blue spirulina, you’re encouraging more production of blue spirulina.

Recipe Steps & Notes

1 Blend oats till consistency of flour and put in separate medium bowl with blue spirulina (if cashews are unsalted add 1/4 teaspoon sea salt) Mix and reblend as needed. Blend on low.

2 Blend cashews coconut oil dates agave into a paste. You want a peanut butter like consistency here. I like adding the agave in here because it helps blend everything together quicker as opposed to a sticky mixing bowl, especially if you’re mixing with your hands (in the next step)

3 Add paste to a mixing bowl and mix ingredients using a stand mixer for speed or you can fold ingredients together by hand. I suggest using optional compostable or biodegradable gloves to keep your hands from getting messy and keeping your speed for the next steps!

4 Roll into balls with your hands! Flat hands produce better even balls quicker. I suggest a large pinch of dough to get you approx 2in in diameter balls to allow for pieces that are 2-3 bites worth.

5 Optional: To add some color and aesthetics, roll in coconut flakes in blue spirulina or coconut flakes. If you opt to roll your healthy blue cashew bites in blue spirulina. After rolling in the blue powder, reroll in your hands again. This presses the blue spirulina into the ball instead of staying on the outside as a coating. This will keep them from getting messy making it easier to eat in the car or prevent messes with kiddos.

To keep your Healthy Blue Cashew Bites in peek shapable ball form, temperature is key! You wan to put them in the freezer for 20 give or take minutes to harden the dough before rolling.
