I love me some guac. Who doesn’t? It’s easy to make, is filling, and is basically guaranteed to please everyone. This is a recipe I always make at home and eat it for lunch when we have a bunch of avocados that all the sudden need to be eatin, as you know avocados tend to do; green one day, the next= all ripe at once. I finally decided to make an official recipe for it, so here it is, I hope you enjoy it too!
Onions. Red onions are better and are more typical in Mexican cuisine, but no need to go out to the store if white or yellow is all you have
Garlic powder. feel free to use fresh garlic! Fresh garlic and ingredients is always going to give to full fresh flavor, but of course it typically takes extra time. Peel and grate 2 fresh garlic cloves for this recipe.
Tomatoes. I happened to have roma tomatoes in the fridge when I created this recipe. Feel free to use small snacking tomatoes and use about 5 of those. If you have beefsteak tomatoes (yumm! My favorite) then use 1 of those guys.
Lime Juice. Fresh lime juice is what really kicks the recipe up a notch, but pre juiced limes are quicker if you need. 1 tablespoon of juice is approx one lime worth.
It’s hard to say no to avocados. It’s a staple part of our diet, unfortunately they’re not the most sustainable. I will say though they do have a smaller carbon footprint than most meat options. Just be aware when consuming avocados that this is the reality. I know it's hard to quit them all together. Look for companies who are working on more sustainable practices with their avocados like Hormel (which is Wholly Guacamole).

As well as all your ingredients and measuring tools listed below
Dice your onion and put into the bowl. Half two limes and squeeze the juice into the bowl. Cut and remove pits from the avocados. Scoop out the avocado meat and place in the bowl
Add salt, garlic powder, and pepper
Mash avocado, and mix all ingredients together
1 1/2 teaspoons sea salt
14 cracks pepper
2 teaspoons garlic powder
1/2 onion, diced
2 Roma tomatoes diced
2 juice from 2 limes
4 avocados
Garnish with Cotija (or another crumbly Mexican cheese, pomegranate seeds, or freshly chopped cilantro
My super favorite are Late July quinoa chips

Since avocados don’t stay fresh long, I suggest eating it the day of. If preferred or if you have extras left over, you certainly don’t need to toss it! Save for max 4 days in the fridge. The lime juice does help preserve it some. Just mix in or scrape off the brown top. Keep in a sealed container. Avocados get pretty mushy in the freezer, if you’re okay with the taste you can freeze for up to 2 months. Though I wouldn’t recommended it personally, fresh guac is the best guac!

I usually don't unless I'm entertaining. My go to is a crumbly Mexican cheese like Cotija. (reference recipe step 3)
