A chive cream cheese sauce with a hint of sour cream to balance our the sharp flavors of the cream cheese. Perfect on potatoes, tacos, and other Mexican food. This stuff is like ketchup.
I developed this while creating my Healthy Ham Stuffed Sweet Potatoes! I wanted something that wasn’t boring and gave the dish an instant boost. Not to add the touch of herby green colors. You’ll love whipping this up as your go to sauce for almost anything. You can even use it as a dip for veggies, chips or wings. Grab it’s left overs out of the fridge and eat with some yummy left over chicken bites.
Chives. Feel free to use scallions. It will change up the flavor a bit, but it’s a great substitute if you need to use them up or if that’s just what you have!
Sour Cream. You’re more than welcome to use vegan sour cream. We use Violife for non dairy cream at the shop for foams and a non dairy option for adding cream to drips, americanos & cold brews etc. We love it. I haven’t tried their cream cheese, but I bet it’s amazing.
Cream Cheese. If you’re going vegan you’ll need a vegan cream cheese as well. Check out Darë. I love their care and branding that goes into each product. I have their cream cheese linked here!

Did you know that cream cheese is actually not the most eco friendly product? Cream cheese comes from cows which in return need lots of land for grazing. I mean you'd hope they have grass and space to roam! A lot of times these poor cows are crowded in confined spaces which creates waste and run off issues and inhumane environments for the duration of the cows lives.
Cows actually create a lot of methane gas which is also known as a contributor to the greenhouse gas issue. So if you're going vegan here, you're typically choosing the more planet friendly option. I totally encourage you to look up the brands you're buying to see how they process their products. It can be quite interesting to actually trace the food in your kitchen back to it's beginnings.
Here's a small batch hand churned cream cheese company out of Maine that intentionally only sources from small farms: Casco Bay Creamery Co. Feel free to see if there's a store that carries their cream cheese near you!
Sour cream also comes from cows with a lot of the same impacts from dairy farms that cream cheese has. I'd look for companies that use regenerative practices like Kalona Supernatural where there's tons of love that goes into the cows and sour cream products itself. Each cow that goes into making their sour cream has a name. I mean come on! Seems like a normal thing, but at the big companies, each cow is just a number.

I also encourage you to try them some deliciously healthy trout tacos with pink beet tortillas!
If needed push around the chives to make sure all of them get blended up! Make sure you blend on low! If you blend on high or for too long the sauce will become a liquid which we don't want here.

Store in the fridge for about a week or so! Keep on hand to use like ketchup with numerous snacks and dishes.

Gather all your ingredients and necessary measuring utensils
1/4c sour cream
4oz cream cheese (1/2 cup)
20-25 chive sprigs
1 1/2 teaspoon salt
4 cracks pepper
Blend on low for 40 seconds. (refer to recipe step 3 for my notes on blending correctly)
