Cut your dinner prep in half with these simple Chipotle Rotisserie Chicken Tacos without sacrificing any flavor!
So for this recipe, I actually was thinking about grilling chicken for these tacos, which obviously is a no-brainer and would taste amazing. We had a busy day and had just bouught a rotisserie chicken from Costco. My husband said well why don’t we save the work and just use rotisserie chicken instead. At first I was hesitant, but then thinking it over again I thought actually that’s such a good hack for this recipe! So instead of grilled chicken chipotle tacos we now have a much easier, zero flavor, sacrifice recipe with chipotle rotisserie chicken taco tacos!
I used my three ingredient slaw for this recipe. Feel free to use red cabbage instead of green.
I use premade cook to eat tortillas. They’re from Costco… Of course. Feel free to use pre-cooked or corn tortillas instead.
I use my chipotle aïoli recipe for these tacos. It taste amazing, but of course feel free to use a different sauce. If you prefer for example, a classic aïoli, that would work great as well, maybe even toss some freshly chopped cilantro into that aïoli and now we’re onto something’ REAL GOOD!
You may have noticed that I did use some edible flower petals in the tacos. I had some leftover in the fridge that needed to be used from a gold bar event (our mobile coffee bar). They didn’t get used and I didn’t want to toss them or let them get wasted so I ended up using them here! And boy do they look pretty!
Rotisserie chickens are honestly fantastic waste savers and sustainable dinners. When we buy a rotisserie chicken, we are buying pretty much the whole bird so instead of letting anything go to waste (besides the organs and innards of course) we are using every piece of the bird. When we use the entire animal, it’s closely related to nature’s ways. In nature, nothing goes to waste. There is always an animal bug or some sort of living creature that benefits off of the passed creature. Thus the planet benefits as well.
4 cups shredded rotisserie chicken
1/2 cup Chipotle aioli (my recipe linked in the ingredient steps will make more you can have ready to go for another meal)
1 teaspoon garlic salt
1/2 cabbage, sliced super thin!
1 tablespoon olive oil
4-6 tortillas (I used 6 tortillas)
Pull apart the meat (4 cups) with your hands it’s the quickest and easiest that way. Use whatever parts of the bird you prefer. I usually go for the white meat/breast first since it’s on top and easiest, especially if the skin of the bird is still crispy, brown and warm! Add it to a medium to large microwavable bowl as you shred.

Making the slaw is very simple and quick. Click here for my recipe if needed. The recipe is very simple, though, just thinly sliced the cabbage, add olive oil, garlic, salt, and pepper. Mix all the ingredients and then we’re good to go.

Turn the heat on for your tortillas if you are cooking them and get out a large pan (set it on the heating burner). If your tortillas are pre-cooked, then skipped this step and warm them right before eating in the microwave.
While our tortilla pan heats up.. Gather all chipotle aioli ingredients and place them into a blender. Find the ingredients below or reference the recipe here: 3 garlic cloves, 1 1⁄2 cups mayo, 1 tablespoons lemon juice, 3 tablespoons chipotle peppers in adobo sauce, 1 teaspoon salt, 2 pinches pepper, 2 teaspoons honey
Once all chipotle aioli ingredients are gathered, your pan should be at temp and ready for the tortillas. They typically will cook 30 to 45 seconds on each side depending on the brand, but check your packaging to make sure.

As tortillas cook, blend your chipotle aoili ingredients to make the sauce. Refer to the recipe as needed here. Blend for 60 seconds on medium-low or more as needed.
Next pour about 1/2 cup chipotle aïoli in with your pulled chicken (add more if you want it saucier!!.) Mix them together. Make sure your bowl is microwavable. Microwave the chipotle chicken for 1 to 2 minutes. Once you’ve microwaved it for one minute, if it needs more time, make sure to mix the chipotle chicken to ensure a more even temperature before throwing it back in the microwave.

If you’re not cooking your tortillas, now is the time to microwave them! If you're using premade cook to eat tortillas, skip this step.
Last things last we assemble our tacos and enjoy! Drizzle extra chipotle aioli over your tacos as you wish!

This recipe tastes best when the rotisserie chicken is fresher which sounds like a no-brainer, but it truly does! It is absolutely not necessary, but if you’re able to plan this dinner for the same day you buy the rotisserie chicken if you buy it warm then do so. Which actually works great because whenever I have a shopping day, I typically always want a quick low effort dinner for that night anyways!

Leftovers usually last about 6 days in the fridge. Store in an airtight container or premake tha tacos and wrap in foil for another easy dinner. If freezing, they'll keep for 1 month without freezerburn (keep the foil wrapped tacos in a ziplock bag.)
