Mayo: use a vegan mayo like this one
I love having this Quick Chipotle Chive Aioli handy in my fridge! It’s so handy for so many different dishes: burgers, rice bowls, and more!
On top of its convenience I love this sauce for last minute dish ideas. Seeing it in the fridge sparks last minute dinner inspiration. Making items at home is no longer better for you because there’s usually less preservatives but it’s fresh, tastes. Some preservatives are aren’t biodegradable and will live on the earth decades or longer contaminating our soil and water. Plus you’re reusing your own Tupperware and serve bottles instead of single use plastic!
PREP WARNINGS & TIPS
No need to cut off the plastic old of your garlic, save time and toss em in whole!
1 ADJUSTING SPICE LEVEL When it comes to your chipotle peppers for this Quick Chipotle Chive Aioli, adding adobo sauce is the most mild, adobo flesh and then especially chipotle pepper seeds are where your spice is really going to come from. Keep this in mind when adding your chipotle peppers in adobo sauce.
If you stick to the recipes at 2 tablespoons and add minimal pepper seeds and flesh your chipotle aioli will be fairly mild with just a hint of spice that adds necessary flavor only.
2 BLENDING don’t blend on high or for too long or your aioli will become a thin liquid. We’re looking for a thicker more mayo consistency.
NO BLENDER? No problem! Grate the garlic on a cheese grater or similar. Stick to only using the adobo sauce instead of thick pieces. And mix well and the a whisk.L or immersion blender.

Creamy herby chipotle aioli with a small hint of tolerable heat from chipotle peppers (but you can make it spicy if you want!)
1 Place all ingredients in blender (reference note 1)
Blend on low for 60 seconds (reference note 2)
