These extremely delicious 2 ingredient popsicles are a major kid favorite. Might I add in a bit obsessed myself!
My kids loveeeee popsicles. I'm writing this post on a warm February day in Nashville. Sounds too good to be true right? Well we just made it through ice storm Fern so I guess mother nature is now rewarding us for sticking it out. Obviously this means we must make popsicles! This recipe actually was inspired by our Hanna Bee Coffee shop menu. We have a housemade Strawberry Mash for granola bowls, Strawberry Mash Matcha, etc. I thought, OMG this would make the best popsicles! It's the simplest yet most delicious creation that is also healthy! There's no unnecessary dyes and no ingredients you can't pronounce or recognize. These popsicles quickly became kid approved in my house! It's also full of strawberry chunks that prevent the popsicles from melting as fast making them mom approved too!
This recipe makes approx 12 popsicles
Honey! Honey is a great alternative to agave. Agave tends to be a bit more neutral in taste.
I recommend you try with whatever frozen fruit you have If you use non frozen you won't get as much strawberry juice which will make for a tougher popsicle. If we're talking a fruit like watermelon or orange it won't matter verses fresh mango.
A huge eco friendly factor with these popsicles is you're making them at home! That's less packaging since we're using reusable molds. That's also less trips to the grocery stores or less food delivery trips cutting down emissions. Not to mention the strawberry popsicles have real strawberries in them, which means no crazy dyes or red 40. Red 40 is not only bad for human consumption, but because it is synthetic, it does not break down properly harming wildlife and ecosystems. Write 40 die is also derived from petroleum, which sounds scary enough, but that also is a very labor intensive and high carbon output product. Red 40 also can contain benzine that’s considered a carcinogen. Needless to say, this is a really bad pollutant to be in our ecosystems.
1 Grab a medium to large sized microwave safe bowl, frozen strawberries and agave

2 Microwave 4 cups of frozen strawberries for 4-6 minutes. We’re looking for them to be soft. A couple harder frozen spots is fine as long as you can mash them.

3 Add half a cup of agave to the microwaved strawberries
4 Grab a mashing tool or a fork if you don’t have one and mash the berries till they look like the photo below. We’re not only mashing, but also mixing in the agave as well right now. We want them to be mashed enough so that we can fit them into our popsicle molds.

5 Pour the mashed agave and strawberry mix into each of your molds
6 Top with your sticks and place in the freezer. Freeze overnight or for at least 10 hours.

7 When removing the popsicles from the mold, if needed to run them under some hot water. Minor silicone are like those because it’s easier to peel back the molds a bit to get the popsicles out. You can also give them the old-fashioned wiggle back-and-forth!
Make sure your strawberries are frozen to get that extra juice to fill up the popsicle mold

You can definitely keep these popsicles in your freezer for quite a while. They will taste their best up to 3 months before they start tasting to freezer burnt and losing flavor

Microwave 4 cups of frozen strawberries for 4-6 minutes till their soft
Add half a cup of agave to the microwaved strawberries
Grab a mashing tool or a fork if you don’t have one and mash the berries till they're a jam consistency. This will also help mix in the agave.
Pour the strawberry-agave mixture into the popsicle molds
Top with your sticks and place in the freezer. Freeze overnight or for at least 10 hours.
When removing the popsicles from the mold, if needed to run them under some hot water and wiggle them out!
