Easy Pistachio Snack Bites

These sweet and salty easy pistachio snack bites are rolled with pistachio cream, pistachios, and oats! Whip them up in minutes!

ABOUT THESE PISTACHIO SNACK BITES

I’m obsessed with pistachio cream. I discovered it probably two years ago and immediately had to put it on our shop menu. We already had Nutella for Nutella lattes on the menu so adding another similar nut bittersweet really messed with our bar flows and efficiency so we swapped it with pistachio syrup, but I’m on a mission to bring pistachio back to the cream for Pistachio Espresso drink because it’s wildly delicious… And kind of addicting. Of course, since I can’t get enough of pistachio cream and find myself eating it off a spoon. I felt like there should be maybe a better non caveman way of eating it haha. So here we go…

ALTERNATIVES

Oats.

I actually used gf rolled oats for this, but you’re more than welcome to use gluten! Here’s the brand I used from Costco.

Salted pistachios.

If you happen to have unsalted pistachios, go ahead and add half a teaspoon of sea salt. Taste test the dough before rolling into balls to make sure you don’t wanna add anymore.

Pistachio cream.

I used Pisti, it’s a classic go to. Almost has more fruity notes. I’m obsessed with Peppertux. A small business with pistachio cream that’s vegan. It’s a bit sweeter which I personally enjoy.

Optional filling.

White chocolate Chips could be really delicious in this! If you try it let me know! A medium or larger sized pistachios would be delish. I’d recommend chopping up pistachios with a knife. Lastly, dates cross my mind here if you did a light chop on dates, they could be too sweet, but also could be delish. Let me know if you try that too!

We not only love pistachios for their undeniable delicious flavor, but they also don’t require a lot of water! Especially in comparison to other nuts. They also leave a lot less waste behind. Their shells can be repurposed for things like pest detergents for gardens, compost, road beds, and natural fire starter!

RECIPE STEPS EXPLAINED

1 Blend the oats

Blend till they’ve reached almost a flour like quality and pour into a medium to large bowl. Does not have to be consistent. It’s OK to have a couple whole oats in there. As long as you have the majority of your oats, a finer dust/flour size grind.

2 Blend your pistachios

Do a similar grind on your pistachios then pour them into the same bowl. Do you want them to be pretty fine but they don’t have to all be uniform.. As long as at least half of your crumbles are closer to a flour consistency. I pulsed them 8 times, 4 seconds on 2 seconds off each time to prevent from releasing any oils and getting too hot.

My blender is pretty powerful, sometimes it’s good and sometimes it’s not! It’s The Quiet One by Vitamix. It’s the same one we use in our shop. If you were using a food processor, it may take longer to achieve the crumbles. If you were using any other typical household blender, it should fall right in between those two.

3 Add your 1 cup pistachio cream to the bowl.

And salt if your pistachios are unsalted now. Mix all your ingredients. I’m a fan of a stand mixer for this one if you have it. A hand blender will work too. (Even the little ones can’t resist, as per the photo!)

4 Roll into Balls.

I would roll them two balls that are about 2 inches in diameter with your hands. Gloves are optional! If they feel a little too soft to work with. Put in the freezer for 10mins.

5 Optional outer coating.

This will be beautiful, rolled in some extra pistachio crumbles (I’d aim for about a cup to 2 cups worth of whole pistachios for this). Coconut is also really nice for you coconut lovers. I haven’t tried it, but cacao nibs could be nice too if you like the crunch!

Ingredients

Instructions

  1. Blend your 1/2 cup oats

    Blend them till they are about a flour consistency. Some whole or partial oats are ok, they don't need to be perfectly uniform. (refer to recipe step 1)

  2. Blend the 2 1/2 cup pistachios

    Blend till half of the blended pistachios have reached almost a flour like quality and the rest are small crumbles. Pour into a medium to large bowl. Use a spatula to get them out if needed (refer to recipe step 2 for an image of what they should look like)

  3. Add your 1 cup pistachio cream & mix all ingredients together

    Add your pistachio cream to the bowl. And the 1/2 teaspoon sea salt now if your pistachios are unsalted. (refer to recipe step 3)

  4. Roll into approx 2in balls

    Roll into Balls. Roll into balls that are about 2 inches in diameter with your hands. (refer to recipe step 4)

  5. Optional outter coating

    I used shredded coconut on a plate to roll mine in which tasted so freaking good in my opinion. (refer to recipe step 5 for more suggestions)
