These Asian Lettuce Wraps make for an easy week day meal. As a busy mom, I get it! You’re running around all day, dinner time hits and boom what do we make for dinner!? Why is it always so hard to find dinner plans lolll! This recipe is one of my favorite go-to’s because of it’s little prep and easy “work flow.”
I love the versatility of this recipe it what I love. Choose chicken for a lighter option or beef for something more hearty. my go-to is always the simple carrot slaw that you toss in the blender, yet scallions, peppers, avocado, sesame seeds, so many things taste delish on these. Grab what you have in the fridge and add it!
When you cook this meal there’s zero ahead of time prep so no marinating, pre-heating or defrosting. I freeze my meats unless it’s on the menu for the next day. Which also means there’s no thinking! Just throwing the meat inthe pan and cooking away!
The carrot slaw is undeniably “blender n’ go.” A bit of honey for sweetness and rice vinegar for that tangy flavor we all loveee. It’s slaw in under 60 seconds.
